I was invited for lunch at a neighbors a little while ago and I planned to make something to bring along. Unfortunately when I came to do the cooking I realized the while I had all the ingredients, I didn’t have enough of one of them…And it was too late for me to go out and get what I needed. So I had to go empty handed. I did, however, eventually get what was required and was able to make and deliver the goods. For those who might not recognize it this is a Victoria Sponge cake, apparently named after Queen Victoria, because she liked this type of cake with her afternoon tea. It consists of two layers of sponge cake separated by a layer of buttercream (or plain cream depending on who you ask) and a layer of strawberry jam (some prefer raspberry). The top is dusted with sugar.
